Salami Toscano to najsłynniejsza toskańska wędlina.

W skład salami wchodzi chude mięso i tłusty boczek. Chude mięso jest krojone i siekane, a następnie odstawione do pomieszczenia o temperaturze 0°C. Po 3 dniach dodawany jest pokrojony w grubą kostkę boczek, a całość po przyprawieniu solą, pieprzem i ziołami, umieszczana jest w naturalnym flaku. Salami dojrzewa około 6 miesięcy w specjalnych pomieszczeniach. Salami wysokiej jakości pokryte jest białym nalotem (pleśnią), co jest dowodem autentyczności i długiego dojrzewania.
